Making the marinade: In a bowl, add in olive oil, garlic powder, salt, and lemon juice. Give it good whisk until well-combined. Set it aside.

Chop the zucchini 1/2" thick, red onions and bell pepper into square chucks, and keep the cherry tomatoes and mushroom whole.

Add in the veggies into the marinade. Give everything a good toss to ensure everything is well coated. Then, refrigerate for 2 hours.

Step 3

(Pre-soak wooden skewers before grilling.) Remove the bowl from the fridge. Take your skewer sticks and start threading your veggies.

Step 4

With a grill pan on medium-high heat, add the veggie skewers. Cook each side about 4 minute each.

Step 5

Plate and serve with pita, chicken or pork skewers along with tzatziki sauce. Enjoy hot!
