In a mixing bowl, add in rolled oats, salt, cinnamon, nuts, and seeds.

Step 1

With a spatula, give everything a good mix.  Set it aside.

Step 2

Add in melted coconut oil, maple syrup, and vanilla extract.

Step 3

Give everything a stir with your spatula until everything is well-coated.

Step 4

Line your baking pan and pour your granola mix onto the pan.

Step 5

Spread loosely or pack tight for cluster. Then, bake for 25 minutes at 350°F. Halfway through, lightly mix the granola. Allow it to completely cool when done.

Step 6

Once the granola is cool, you can add dried fruit and chocolate chips.

Step 7

Transfer into an airtight jar and store for up to 1 month room temperature. Enjoy!
