Wash your veggies and cut into desired sizes. We kept the sweet peppers and Roma tomatoes whole. Chop carrots into sticks.

Step 1

Line up the cut and whole veggies on a baking pan. Drizzle olive oil and season with oregano and salt. Toss so they are well coated.

Step 2

Grill until they are tender and form a nice char. Plate and serve hot with meat skewers, rice, or crispy lemon potatoes!
