Chop your baby potatoes in half. Add them into a small pot.

Step 1

Bring the water to a boil and cook until fork tender. Drain and set it aside in a bowl.

Step 2

Add the eggs into a small pot and submerge with water. Bring it to a boil and turn off the heat. Leave covered for 8 minutes.

Step 3

Add the eggs into an ice bath. Then remove the shell and chop into small pieces. Add into the potato bowl.

Step 4

Add in chopped onions, scallion, and celery with the potato and eggs.

Step 5

With a spatula, give everything a quick toss. Set it aside.

Making the mayo sauce:  In a small bowl, add mayo, salt, pepper, smoked paprika, apple cider vinegar, and Dijon mustard.

Step 7

With a spoon, give everything a good mix.

Step 9

Add the mayo mixture into the bowl of ingredients. 

Step 10

With the spatula, mix everything until everything is well coated. Transfer into a airtight container and chill.

Serve in a casserole dish or bowl and Enjoy!
