I swear we eat things other than breakfast around here. This simple gluten-free pancake recipe is a highly requested item week after week. 

This recipe proves once and for all that when you go gluten-free, you don’t have to miss out on fluffy pancakes. This makes perfect pancakes every time!

Which Gluten-Free Flour is Best For Pancakes?

Bob’s Red Mill
1:1 Gluten-Free Baking Flour

There are many gluten-free flours available, and it can be difficult to know which one to use with which recipes. Bob’s Red Mill 1:1 Gluten-Free All-Purpose Flour is my choice for this recipe. We’ve also tested with King Arthur’s Gluten-Free Flour in this recipe and still made delicious fluffy pancakes.

Gluten-Free Pancake Recipe Ingredients

The ingredients are quite simple and these are essential pantry staples! For this recipe, you will need:

  • All-Purpose Flour (gluten-free)
  • Baking Powder
  • Sugar
  • Egg
  • Milk
  • Salt
  • Butter (sub for ghee, coconut oil, or opt-out)

How To Make The Best Fluffy Gluten-Free Pancakes Batter

The best pancake batter is one that hasn’t been overmixed and isn’t too liquidy. Pancake batter should be thick, lump-free, and even. Pancake batter that is too thin can result in flat pancakes with little fluff. Fear not, as you follow along with these steps, you will have perfect pancakes each and every time.

How To Freeze Gluten-Free Pancakes

One thing I really love about this recipe is that it can be meal prep just by freezing the pancakes and reheating them in a toaster oven the next morning. Quite the time saver! Freezing pancakes is a quick and easy way to have fresh-out-of-the-toaster pancakes in the morning on any given day. The following are the steps for freezing pancakes:

  1. Make pancakes in a pan or on a griddle. Place the pancakes on a plate and set them aside to cool completely.
  2. Using parchment, wax paper, a silicone pad, or plastic wrap, line a baking sheet (don’t use aluminum foil).
  3. Place the pancakes on a baking sheet lined with parchment paper and place the baking sheet in the freezer.
  4. Freeze the pancakes for at least 30 minutes to an hour before moving them from the tray to a sealable zip bag.
  5. Mark the zip bag with the batch and date of the pancakes.

How To Reheat Frozen Pancakes

It’s easy to freeze pancakes, but you know what’s even simpler? Having a stockpile of frozen pancakes on hand for a quick breakfast that everyone loves.

Warming frozen pancakes in the microwave is as simple as putting them on a microwave-safe plate and microwaving them uncovered for 30 seconds to 1 minute, depending on the number of pancakes, before the middles are heated through.

Remove from the microwave and serve topped with butter and syrup.

Toast the pancakes in a toaster or toaster oven on the “medium” toast level. Warming the pancakes in the toaster can result in a crisp outer layer. Serve with butter, syrup, or other toppings.

Tools used: Medium Frying Pan or Griddle, Measuring Cups and Spoons, Glass Measuring Cup, Silicone Whisk or Silicone Spatula, Large Mixing Bowl, Turner

  1. Sift together the flour, baking powder, salt, and sugar in a big mixing bowl.

  2. Make a well in the center and pour in the milk, egg, and melted butter; whisk or fork until smooth.

    Optional mix-in: if you want to enhance your pancakes you can add in 1 cup of blueberries, chocolate chips, or sliced bananas. Lightly mix into the batter.

  3. Mix dry and wet ingredients.

  4. Preheat a nonstick griddle or a large skillet over medium-high heat. 14 cup batter should be poured or scooped for each pancake. Wait for bubbles to shape before flipping. Brown the other side.

  5. Serve with coconut whipped cream, maple syrup, and mixed berries.

  • Bananas: Add 1 mashed or sliced bananas – no changes.
  • Nuts or Berries: Add up to 1 cup – no changes.
