Quick and Simple 2-ingredient Avocado Toast breakfast made 5-ways with your favorite toppings! Who said breakfast had to be boring?

Did somebody say avocados? Avocados are just about the versatile fruit there is. From using it as a cold-pressed oil, in salads, smoothies, and even ice cream! When I was first introduced to eating avocado, it was guacamole. Little did I know this was the best thing ever! How could anyone possibly dislike avocado, cilantro, tomato, and red onions altogether? It’s like all of my favorite vegetables and fruit all-in-one! Even before avocado toast became a “hype,” I was already having guacamole on toast with a fried egg. It was perfect!

When I don’t have guacamole available, just an avocado with a bit of salt and pepper mashed on toast is a simple and easy breakfast to enjoy. If you enjoy avocado and toast as much as I and looking for healthy breakfast ideas. You’ve come to the right place! Here are some benefits of eating avocados and ways to make your avocado toast 5-ways!

Benefits of Avocado

Did you know that 3.5 ounces (100g) of avocado contains 2g of protein, 15g fat, 9g carbs, and 7g of fiber? Yep! Although it is high in fat, it is the healthy kind like oleic acid (that’s also a huge component in olive oil). Let’s not forget avocados not only contain many B Vitamins, but also folate, vitamin C, and potassium. Some of the health benefits it offers are:

  • Promoting gut health and reducing blood sugar levels 
  • Can lower cholesterol and Triglyceride levels
  • High in antioxidants that can protect your eyes as it contains carotenoids lutein and zeaxanthin

You can easily incorporate this into your diet as they are neutral in taste. They come in various sizes, shape, and color. I usually love the medium size as it is perfect for a large salad, smoothie, or making toast for 2. When picking out avocados, I typically go for some slightly soft ready to eat and some bright green and hard that will ripen during the week. This way you don’t let your avocado go bad. 

Tip: If you don’t plan on eating the avocado, it is best left to refrigerate them as it will slow the ripening process. When you know you will be eating it in a day or two, just take it out in advance to let it ripen. By the time you are ready to enjoy it will be perfect!

Fun Fact: Avocados actually contain more potassium than bananas!




How To Eat Avocado on Toast

There are a few ways to enjoy avocado when preparing it on your toast. Depending on how much time in the day you have really made a fancy and delicious avocado toast. Here are some of my favorite:

  • Make a rose: by thinly slicing the halved avocado and removing the seed. Then slightly spreading the thin slices and carefully wrapping them from the center out. You can place it on top of your greens and toppings
  • Cubed: by halving the avocado with the seed removed. then slicing ¼-inch spacing vertically and horizontally. Use a spoon to scoop it out of the skin and you have cubes! (Or you can scoop it out first and then cube it. I like the first method because you don’t need a cutting board)
  • Sliced:  by halving the avocado with the seed removed. Then thinly slice and scoop it out with a spoon.
  • Mashed: by halving the avocado with the seed removed. Next, you can slice it into ¼-inch and scoop it out. Then place it on your toast and use a fork to mash (“spread”) it.

Now if you are thinking, “How can I store half of my unused avocado without it browning?” I’ve got the answer for you! I learned this neat trick that if you take your airtight container with some filtered water, and place the sliced avocado side face down; this will prevent it from browning! No more scooping or throwing away your avocados. YES!

Types of Topping on Avocado Toast

Honestly, whatever vegetables, fruits, or greens you like, you can easily mix them up. That’s what I like about avocado toast, it’s quick and easy to make. Here are some of my favorite combinations:

  • Caprese Arugula Avocado Toast
  • Smoked Salmon Avocado Toast
  • Mushroom Radish Avocado Toast with a Fried Egg
  • Poached Egg Avocado Toast
  • Chili Flake Avocado Toast

How To Make Avocado Toast

Ingredients:

  • 1 Avocado (sliced or mashed)
  • 2 Slices Bread (of your choice, toasted)
  • Salt & Pepper (to taste)

Topping Options:


Prep: 5-10 minutes | Cook Time: 5-10 minutes

Time needed: 20 minutes.

Instructions:

  1. Avocado Toast $0.89/toast

    1. Toast your choice of bread and then place it on a plate.
    2. Then, slice your avocado in half and remove the pit. Make horizontal slices and scoop the avocado out. Place your avocado onto your toast. You can mash it with a fork or leave them whole sliced. Season with salt and pepper to taste.

  2. Caprese Arugula Avocado Toast (cherry tomatoes, bocconcini, fresh basil, balsamic glaze) $1.81/toast

    1. Toast your choice of bread and then place it on a plate.
    2. Then, slice your avocado in half and remove the pit. Make horizontal slices and scoop the avocado out. Place your avocado onto your toast. You can mash it with a fork or leave them whole sliced. Season with salt and pepper to taste.
    3. Next, place some arugula on top of the avocado. Then, the halved cherry tomatoes and Bocconcini (small mozzarella balls).
    4. Garnish with fresh basil and balsamic glaze. Now, Enjoy!

  3. Smoked Salmon Avocado Toast (smoked salmon, cherry tomato, arugula) $3/toast

    1. Toast your choice of bread and then place it on a plate.
    2. Then, slice your avocado in half and remove the pit. Make horizontal slices and scoop the avocado out. Place your avocado onto your toast. You can mash it with a fork or leave them whole sliced. Season with salt and pepper to taste.
    3. Next, add your arugula on top of the avocado. Then your halved cherry tomatoes. Place 1-2 slices of smoked salmon on top.
    4. Now it’s ready to eat. Yum!

  4. Chili Flake Avocado Toast (chili flakes, olive oil/avocado oil) ~$0.95/toast

    1. Toast your choice of bread and then place it on a plate.
    2. Then, slice your avocado in half and remove the pit. Make horizontal slices and scoop the avocado out. Place your avocado onto your toast. You can mash it with a fork or leave them whole sliced. Season with salt and pepper to taste.
    3. Garnish with chili flakes and a dash of olive oil or avocado oil.
    4. Ready to enjoy a simple and delicious avocado toast! 

  5. Poached Egg Avocado Toast (egg, spinach, turkey bacon/bacon bits) $2.07

    1. In a small pot, bring your water to a boil. Poach your egg for 3-4 minutes. Remove from the water and set it aside on a plate. (Be sure to poach your eggs, one at a time.)
    2. On a small frying pan, take chopped-up bacon and cook it to desire crispiness. Set it on the same plate with a poached egg. 
    3. Toast your choice of bread and then place it on a plate.
    4. Then, slice your avocado in half and remove the pit. Make horizontal slices and scoop the avocado out. Place your avocado onto your toast. You can mash it with a fork or leave them whole sliced. Season with salt and pepper to taste.
    5. Add spinach on top of your avocado. Place your poached egg on top.
    6. Garnish with turkey bacon or bacon bits. (Shredded cheese of choice optional.)
    7. Perfectly yolky egg with a crunch. Enjoy!

  6. Mushroom Radish Avocado Toast with a Fried Egg (radish, spinach, egg, mushroom) $1.67/toast

    1. Thinly slice your radish. Set it aside on a plate.
    2. On a small frying pan, add a 1 tablespoon of olive oil on medium heat. Make sure the pan is hot before you crack your egg. Allow it to cook for about 2-3minutes to let the egg white get crispy. Place it on the same plate with your radish and set it aside for now.
    3. In the same oiled pan, add in the mushroom. Allow it to cook for 2-3 minutes. 
    4. While the mushroom is cooking, toast your choice of bread and then place it on a plate.
    5. Then, slice your avocado in half and remove the pit. Make horizontal slices and scoop the avocado out. Place your avocado onto your toast. You can mash it with a fork or leave them whole sliced. Season with salt and pepper to taste.
    6. Add the spinach on top of the avocado. Then place your radish and mushroom. Top it off with the fried egg.
    7. Now, it’s ready to eat! Mmm…
